This ‘set-it and forget-it’ one-pot recipe is perfect for long days out with the pigs or at the Meat Shop.

Ingredients
One Pork Tenderloin or Boneless Pork Loin Roast ~ about 1.5 pounds
(You can pick up both from our Meat Shop)
Two teaspoons kosher salt
One teaspoon dried rosemary
One teaspoon celery seed
Half a teaspoon ground black pepper
One to three cloves garlic, minced
One tablespoon olive oil
One small to medium onion cut into four large slices
Three tablespoons soy sauce
Two tablespoons Worcestershire sauce
Two to two and a half pounds of potatoes, cubed
Three tablespoon butter, divided
One tablespoon chopped parsley
Additional salt and pepper to taste
Instructions
Combine ingredients #2-6 in a bowl. This will be your spice mixture.
Bathe the pork in olive oil and then coat with the spice mixture.
Line only one side of the bottom of the slow cooker with the onion slices and place the pork on top. Don’t let the pork rest on the edge of the slow cooker.
Pour the soy and Worcestershire sauce over the pork.
Do you remember that one side of the slow cooker that we left empty? That is where your tin-foil packet of potatoes is going to go. Fill this packet with the cubed potatoes and 1 tbsp butter.
This is where the “set-it and forget-it” comes into play. Cook this bad boy for 3.5-4 hours on low, or until the pork reaches 145 degrees.
When the pork is done, let your masterpiece rest out of the slow cooker for 3 minutes.
Remove the packet of potatoes and combine with the other 2 tbsp of butter, parsley and salt and pepper.
Slice and serve the pork and potatoes immediately to your hungry family!
Pro Tip: If you’re tired of the same old potatoes, substitute with sweet potato or winter squash for a unique flavour.
