Ask Your Butcher: Our Favourite Tips for Cooking Spragg’s Pork

At Spragg’s Meat Shop, we love pork! We love farming pork, selling it to local Albertan families like our own, and we especially love eating pork!

We’ve asked your favourite butchers and farmers working behind the scenes at Spragg’s Meat Shop what our favourite tips are for cooking Spragg’s pork, and this is what we had to say:

Bonnie, Spragg’s very own co-owner and Rosemary Meat Shop manager, says that her tip is for those who always find their pork chops to be dry and tough in their recipe. Substitute a Boston Butt pork steak in for the pork chops and make the exact same recipe. Voila!! Delicious, tender pork for half the price of pork chops.

Leanna, our local butcher and Calgary Meat Shop manager, says that she has many favourite ways to cook Spragg’s pork because pork is such a versatile protein. Some of her favourite cuts of pork to cook are anything comforting and hearty. Slow roasted crispy pork belly is at the top of her list! For this, her tip is to make sure you render a good amount of the fat, and your rind is well seasoned and dry before cooking. At the end, keep a close eye on the skin, so it doesn’t burn.

Ground pork is also on her weekly grocery list due to its versatility. Ground pork is great in chilli, meatballs, soups, pasta, and so much more! Leanna says that her tip is to brown the meat first. The more colour, the more flavour! Once you have browned the pork, add in your veggies or sauce, and let it fully cook.

Steve, our meat cutter at Spragg’s Meat Shop in Calgary, says that in the colder weather months, anything slow-roasted or stewed is his favourite way to cook Spragg’s pork. The other day, he made a delicious cider pork stew. Steve says that his tip for slow roasting and stewing Spragg’s pork is all about the temperature and time. For delicious tender pork, low and slow is the way to go!
